Da kommt dann 0..20Volt raus. Und wie soll der OP das schaffen, wenn er nur 5V Betriebsspannung hat?

Erstmal musst du dir ein Konzept aussuchen:
1.) "normaler" OP mit mehr als 20V Betriebsspannung plus zusätzlich negativer Versorgungsspannung.
2.) die Masse des OP's so trickreich legen, dass er mit deiner Ein/Ausgangsspannung funktioniert.
3.) ein Rail to Rail OP mit 20V Versorgungsspannung.
